  1. Place the potatoes into a pot and cover with salted water. Bring to the boil over high heat, then reduce heat to medium-low, cover and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Allow the potatoes to cool.
  2. While the potatoes are cooking, place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 2.5cm. Cover the saucepan and bring the water to the boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel and dice once cold.
  3. Place the potatoes, beetroots, eggs and mayonnaise into a bowl, mix well and season to taste with salt and pepper.

I have been making this for years but didn't know it was Russian. I personally like it. I do use pickled beets and or pickled eggs because I like the zing from the vinegar, it gives it more taste. If you like beets you will like it. Thanks for sharing.-11 Jun 2010

A unique potato salad. As one reviewer suggested, I used pickled beets which really had a nice flavor. I think regular beets would be too bland. Tasty, interesting to try, but I prefer a more traditional potato salad.-20 Jun 2010

Beet Potato Salad with Eggs is a great side dish for everyone to enjoy! Vegan and non vegan option.

Not only that but it&rsquos naturally dyed from the beets! I hate seeing red food coloring in food these days. We don&rsquot need these colors in our foods or any products that are on store shelves. In fact brands have taken notice and starting to use things like beets, spinach and turmeric to color food naturally. While I agree colors are fun, they should be kept safe. There&rsquos nothing safe about eating a red velvet cupcake that most likely needed an entire bottle of red food dye to make it red velvet. By boiling the beet whole in this recipe you keep that color nice and vibrant. Never, ever cut a beet that you&rsquore boiling or it will bleed out all it&rsquos beautiful color.

Our daughter is obsessed with pink. She&rsquos a pinkalicious, pink princess. When we make potato salad she will pick out the potatoes and eat it, but when we make PINK Beet Potato Salad with Eggs, she eats it all. Hints and Tips

  • You can either peel the potatoes or leave the skin on. I usually leave the skin. If you do choose to leave the skin on, give them a good scrub and remove any blemishes before boiling.
  • If the potatoes are very large, cut them in half or quarters, it will speed up the cooking time.
  • Allow the potatoes, peas and eggs to cool before assembling the salad.
  • For convenience, use diced canned beetroot, drain and rinse well to remove the pickling juices.
  • Use ready made or homemade unflavoured natural Greek yogurt for the salad dressing .
  • For mixing the dressing into the salad use a flexible spatula/bowl scraper, it’s easier than using a wooden spoon.
  • When mixing the dressing into the potato salad, season the salad to taste with salt and pepper.
  • If you have prepared the salad in advance, it may look a little dry, mix 1- 2 tablespoons of Greek yogurt just before serving.

Ingredients of Potato and Egg Salad

  • 400 gm halved,peeled,boiled potato
  • 3 tablespoon mayonnaise
  • 1 pinch powdered black pepper
  • 2 peeled,finely chopped egg
  • 1 teaspoon dijon mustard
  • 1 pinch powdered salt

How to make Potato and Egg Salad

Step 1 Mix potatoes and eggs

To prepare this interesting and healthy salad, add the boiled, peeled and halved potatoes to a large bowl. Now add finely chopped eggs with mayonnaise and Dijon mustard in the same bowl. Mix them well together.

Step 2 Add spices and serve

Sprinkle some salt and pepper in it and again mix it well. Garnish with coriander leaves. Cover the bowl with a lid and keep it in the fridge for around 30 minutes. Serve this healthy salad chilled.


Boil eggs, drain and set in cold water for 15 minutes. Peel eggs, place into a bowl and store in the refrigerator for about 1 hour before using.

In a large pot, bring 3 quarts of water to boil. Add 1 tablespoon salt and stir through. Peel potatoes and cut into quarters. Boil potatoes for 22 to 25 minutes or until they are easily pierced through with a knife. Do not overcook or the potatoes will become too mushy.

Toward the end of cook time, fill a very large bowl with ice and water. Drain potatoes through a large strainer and place strainer with potatoes into the ice bath.

Let potatoes cool in ice bath for 10 to 15 minutes. Drain once more and chop potatoes into 3/4 inch cubes. Set aside.

In a large plastic or glass bowl, combine mayonnaise (use the creamy, mild-flavored kind), mustard, relish, cider vinegar, salt to taste, onion powder, garlic powder, and pepper.

Roughly chop four of the five eggs. Add to the bowl and mash into mayonnaise mixture.

Add the potatoes, chopped celery, and chopped chives to the bowl. Gently fold into egg salad mixture until well incorporated. Taste and add more salt if needed.

If the mixture is not creamy enough, add another 1/4 cup of mayonnaise at a time until it reaches the desired consistency.

Scoop salad out into a serving dish and chop remaining egg into sixths. Place pieces around the salad and top with washed celery leaves or chopped chives for garnish.

Cover with plastic wrap and let cool in the refrigerator for at least 2 hours before serving.


  • 800g/1lb 12oz baby new potatoes, scrubbed
  • 6 large free-range eggs
  • 3 tbsp mayonnaise

Carefully peel the eggs and roughly chop them. Gently stir the chopped eggs into the potatoes, along with most of the chives.

Check the seasoning then serve the potato salad sprinkled with the remaining chives and a generous dusting of sweet smoked paprika.
