Some time ago I saw on the PAPRIKA program a show with Jamie Oliver where he was at a school and he was trying to show the students what ice cream is made from in the store, which they always enjoyed with such pleasure. Seeing the show (I will not describe the ingredients here because it is not the right place but… .they were odious) I thought that if it is so for them, we would not even want to think about what it is like and what ice cream is actually made of ours, so I decided not to buy ice cream anymore but to make it at home. So… yesterday I got to work this morning and I want to tell you that it was not at all complicated and now even more I don't see any reason to ever buy ice cream again.

RECIPE PREPARATION Homemade ice cream with berry sauce:

I put the milk, the egg and the caster sugar on low heat and I stirred continuously until they boiled, I didn't leave much on the fire only until the composition thickened a little. I set it aside, added the essence and vanilla sugar and left to cool. After it cooled, I beat 400 ml of whipped cream and mixed it with the boiled and cooled composition, and then I put it in the freezer. From hour to hour I took out the container in which I put the ice cream and mixed it so that no ice needles formed, I mixed it about 3 times in total and in the evening I ate a delicious ice cream that I knew exactly what it contained.

For the recipe of ice cream with berries and yogurt you can use any kind of berries, the only condition is to be frozen. This is the only way you will be able to have ice cream in less than a minute.
Greek yogurt can be replaced with drained yogurt, and honey can be added to taste. Of course, it can be omitted from the recipe.

Fruit ice cream is one of my husband's favorites. So I decided to pamper him, especially since I have a new high-performance blender. It is about the Oster Reversible blender which has a reversible system, which means that the blades rotate in both directions for a better and faster mixing. Thanks to the reversible blade system, which draws ice or ingredients into the bottom of the vessel, the mixing and chopping power increases.

blender Oster Reversible has a borosilicate glass bowl (resistant to shocks and scratches). You know my anger with plastic, I don't like plastic because it scratches and looks ugly. It handles perfectly to crush ice, nuts, hazelnuts, almonds or frozen fruits as you will see in the video recipe. In addition to the 3 gears, the blender also has two preset buttons (2 programs) with reversible function. One with a lower speed for cream soups and sauces and one with a higher speed for ice drinks or smoothies.

For fruit ice cream I chose not to use sugar at all, this to make it even healthier. I put honey and used almond milk, which I also prepared with Oster Reversible. It's so easy, it's not even worth buying almond milk. If you hurry you can soak the almonds for an hour in hot water and you can make the milk without problems. I left them overnight because I prepared everything the night before I made the recipe. You can make fruit ice cream using fresh fruit and freezing only bananas.

I froze all the fruit to get one creamy ice cream without the need to add sour cream or whipped cream. You can use any kind of fruit you want. You don't have to limit yourself to the three I used, it's important to please your family. Because we use frozen fruit, fruit ice cream is ready in just 2 hours, even less if you have a freezer that freezes quickly. It is healthy, fragrant and addictive.


800 g of sour cream
400 g of sugar
Beat 4 eggs
800 g of whipped cream
30 ml of condensed milk
1 tablespoon vanilla essence
300g of mashed berries

In a large hot pan, heat the cream, add the sugar and mix gently until melted. Add small pieces of sour cream mixture to beaten eggs, stirring lightly. Transfer everything back to the pan, stirring constantly at low temperature, until the mixture sticks to a metal spoon. Remove the pan from the heat and cool in an ice bowl, stirring for 2 minutes. When it has cooled, add the whipped cream, milk and vanilla essence. Add the berries and mix well. Frozen pour into molds. If you want, add ice cream sticks. Put the containers in the freezer overnight. To peel the ice cream when it has cooled, put the form in hot water for a few seconds. Good appetite for ice cream!


Homemade ice cream with raspberries and yogurt

Homemade ice cream it is an extremely simple preparation that will not rob you for too long.

1. Mix raspberries, yogurt and sugar with a blender. Pour the composition into a bowl.

2. Beat the egg whites until foamy, then pour over the raspberry mixture, stirring.

3. Put everything in a heat-resistant dish and put in the freezer for at least 6 hours.

At the end, homemade ice cream can be decorated with other berries such as blueberries.

If you have at least 1-2 kg of fruit left, you can try the following raspberry jam recipe.

500 g raspberries
250 g sugar
250 creamy yogurt
2 egg whites (preferably homemade eggs)

Pavlova with lemon curd and berry sauce

You have probably noticed so far, in my seven years of blogging I have never done, and here I am as sincere as possible, the famous #pavlova. I was a little reluctant, due to a major childhood failure, when I then prepared a walnut meringue cake, which was a total fail. My mother always laughs at me and teases me and tells me how disappointed I was and how I cried when I saw that countertop deflated :)). Below you have my first pavlova recipe, which turned out quite well for me. The taste was insane.

For 6 people :: Preparation 30 minutes :: Baking 70 minutes :: Medium difficulty

Ingredient:
& # 8211 230 g fine white sugar
& # 8211 2 tablespoons cornstarch
& # 8211 6 egg whites
& # 8211 1/2 teaspoon cream of tartar
& # 8211 1/4 teaspoon salt
& # 8211 1/2 teaspoon vanilla extract
& # 8211 1 teaspoon white wine vinegar

Preparation: preheat the oven to 150 degreeC.
Prepare a large tray with baking paper. To make it easier for you, with the help of a plate, draw a circle with the desired size.
Mix the sugar and starch together.
Beat the egg whites until they become foamy. Add cream of tartar and salt, continue to beat medium. Add the sugar / starch mixture to the mixture, one tablespoon at a time. Beat the egg whites well. You know what the test is, right? Take the bowl and lift it above your head, if they do not fall, it means they are good. :))
Transfer the mixture to the baking paper, and use a spatula to give it a round shape. Bake for 50 minutes.
Close the oven and let it cool in the oven for 2 hours. You can leave it overnight.

When you are ready to serve it, you can add lemon curd and berry sauce.


Lemon curd:
& # 8211 70 g sugar
& # 8211 60 ml fresh lemon juice
& # 8211 4 egg yolks
& # 8211 60 g butter

In a saucepan, mix the lemon juice with the sugar, on the fire, just enough for the sugar to dissolve. Separately beat the egg yolks with the mixer. Add the lemon juice while beating with the mixer. Pour the composition again in the pan and on the bain-marie boil until it becomes a dense and creamy cream. Or even the spoon is "dressed" in cream. While the cream is still warm, add the butter cubes and mix well. Transfer it to a bowl and refrigerate.

Berries sauce:
& # 8211 400 g frozen berries
& # 8211 50 g sugar

Pour the frozen fruit into a saucepan, pour the sugar (50 g) and let it thaw. If the fruits are too big, cut them. Put the fruit on the fire and cook for a few minutes. At the end add a little starch dissolved in cold water and pour over the sauce to thicken it. Let it cool well and then let it cool.


Blueberry ice cream

  • Wash the blueberries well, crush them a little with a fork and sprinkle the 5 tablespoons of sugar on top. Let them rest until we prepare the sweet cream whipped cream to which we added a tablespoon of powdered sugar and the vanilla sugar sachet. Add the blueberries to the blender until it reaches the desired consistency, then add it to the whipped cream. Mix lightly with a spoon until smooth. The resulting cream has a very very beautiful color. but be careful, this beautiful color definitely stains the clothes! The composition is poured into a plastic pan, put the lid on and put in the freezer for about 5 hours.

Also from Ina I found out the secret of a creamy ice cream, without ice crystals. Thus, every hour, the ice cream is taken out of the freezer and mixed very well with a spoon. I mixed in the ice cream 4 times in 3 hours. I kept the ice cream in the freezer for another 2 hours without stirring.
