Don’t be fooled by the pretty pink hue; Aperol’s bitterness and tequila’s bite keep this slushy from being too sweet.
- 12 strawberries, hulled, halved, plus more, sliced, for serving
- 4 ounces fresh lime juice
- Lime wheels (for serving)
Stir honey and 1 oz. warm water in a small bowl to dissolve. Combine honey syrup, strawberries, tequila, Aperol, and lime juice in a blender and freeze 3–12 hours (mixture will be partially frozen).
Add 2 cups ice to mixture and blend until thick and smooth. Divide among glasses and garnish with lime wheels and strawberry slices.
